Today, I am going to share with you something that most Kiwis know and love. It's a simple recipe that is usually for a morning or afternoon tea, they are quick and easy to make and require very simple ingredients. There are plenty of recipes out there and this one is a tried and true recipe, that my family have used for everrr , so sit back, scroll and enjoy.
1 cup flour
1/4t salt (not pictured)
1t cream of tartar
1/2t baking soda
1 large egg
1T golden syrup
1/2 cup milk (and an extra 2-3T if needed)
Method: Sift flour, salt, cream of tartar, baking soda and stir in sugar ( I have used coconut sugar because I don't use regular sugar, but you can absolutely use regular sugar). You then need to add in the egg, milk and golden syrup and mix the batter. Add the extra milk if required as the consistency should be fairly runny (see photo below for reference).
Heat a griddle or frying pan (medium heat), melt a small nob of butter and/or oil and drop dessertspoon scoops into the pan to cook. Turn/flip the Pikelet when you see bubbles appear on the top of the batter and the edges of the Pikelet. Cook till golden brown (4-6 mins depending on the heat of the pan) and eat!!
There you have it, a quick, simple and damn delicious treat. You can serve it many ways, but 'traditionally' Pikelets are served with whipped cream and jam. I prefer cream and a drizzle of golden syrup and these morsels are best eaten the day they are made or by the next day if stored in an air tight container.
